Pumpkin Gnocchi

This meal takes about an hour and a half to make but is definitely worth it! This meal is for a generous four, maybe five, serve it with Parmesan cheese. This is a recipe I got from some friends in New Zealand.
Ingredients
A large pumpkin cut into chunks
2 ½ cups of flour (plus extra for dusting)
60g butter
2tbsps thyme leaves
¼ tsp ground nutmeg
½ tsp salt
Salt and pepper (to taste)
Parmesan shavings
Method
1. Preheat the oven to 200℃ (400℉, Gas mark 6) and line a baking tray with grease-proof paper
2. Scatter the pumpkin in a single layer on the tray. Sprinkle salt over the top. Place in the oven and cook for 1 hour or until tender. Set aside to cool slightly.
3. Place the pumpkin in a large bowl and mash until smooth. Taste and season with salt and pepper
4. Add flour to the mash and mix into a sticky dough that holds together.

5. Divide the dough into 4 even portions. Roll 1 portion out onto a floured surface into a sausage. Cut the dough into the desired size for gnocchi. With floured hands, roll each piece of dough into a ball. Place the gnocchi on a lined tray. Repeat
6. Bring a large saucepan of salted water to boil at a medium high heat. Cook the gnocchi in batches according to the size of the pan. Cook each batch for 2-3 minutes. Remove with a slotted spoon and drain before transferring to bowl.Cover it with foil until all the gnocchi is cooked.
7. Heat a large frying pan over a medium heat and melt the butter. Add the thyme leaves and cook for 1-2 minutes until aromatic. Add the the gnocchi and pan for 2-3 minutes, stirring carefully until golden brown.
8. Divide the gnocchi among serving plates and garnish with Parmesan.
